“Finca El Diviso is Nestor Lasso's farm in Huila, Colombia, where he runs small-lot fermentations at around 1,750 m. This Ombligon — a rare Colombian variety — went through an advanced natural process, drying the whole cherry slowly to concentrate fruit. The result is a berry-driven cup: strawberry and raspberry up front, blackberry and cherry behind it. Brew Fusion roasts it light and sells it as a single 250 g box for espresso or filter.”
