Highlights
“Bourbon Aji is a rare Colombian variety, and Nestor Lasso grows this lot at Finca El Diviso in Huila, where the coffee ripens at roughly 1,750 metres. The cherries went through an advanced natural process, dried whole and slow, which keeps the cup sweet and fruit-forward: strawberry and cherry first, then red and tropical fruit. It is roasted omni-light by Kima Coffee and packed in a 250 g box for filter or espresso.”
