“Lalesa Kebele, in the Ethiopian highlands, is where EPHTAH produces this lot from the 74110 and 74112 selections plus local heirloom varieties, grown between 2,150 and 2,200 metres. It is processed as a black honey: the skin comes off while mucilage stays on the seed through drying, which lands between a washed and a natural in the cup. Tropical fruit and peach run into milk chocolate and black tea. People Possession roasts it for filter in a 200 g bag.”
