“La Bendición is a washed coffee from the department of La Paz, in western Honduras, grown by José Luis Pacheco at Finca La Bendición at 1,700 masl. The lot belongs to the Lempira variety, developed in Honduras and closely tied to the country's coffee tradition; La Paz's mountains and climate favour the gradual ripening of the cherries. Ripe cherries are sorted and pulped, fermented to loosen the remaining mucilage, washed with clean water and dried progressively to a stable moisture level.
