“Milenio is an F1 hybrid (Sarchimor x Rume Sudan) grown by Senel Campos Valverde at Finca El Cola Roja in San Jerónimo de San Pedro, Brunca, and processed at his Don Senel micromill. Cherries were picked at a near-overripe stage and dried slowly for 38 days, a deliberately stretched natural that leaves plenty of wild, yeast-driven fermentation in the cup. Brew Fusion lists it as roasted by Scenery Coffee.”
