“Ají is a rare Colombian variety, washed, from Fellows Farms - a project started in 2022 by Inmaculada Coffee Farms, the Holguín Ramos family's operation, to buy from smallholders across Huila and Cauca and pay them for quality. Grown between 1,700 and 2,000 metres, it cups floral and syrupy: orange blossom, grapefruit and candied strawberry, with raw honey and candied pineapple underneath. Nomad Coffee roasts it light for filter, and Brew Fusion sells 250 g bags.”
