“This washed Java from Rodrigo Sanchez delivers crisp strawberry and chamomile complexity. Cherries are harvested above 22 degrees Brix, rested 12 hours in cherry, then pulped and anaerobically fermented for 64 hours in barrels before washing and drying for 15-18 days. Las Veraneras sits on the Peñas Blancas mountain range between Acevedo and Pitalito, surrounded by over 200 hectares of forest reserve and home to more than 20 varieties including Sudan Rume, Mokka, Purple Caturra, Pacamara, and Geisha.”
