Highlights
“Bonito first tasted this Gesha when the plants at Finca La Joya were still young, producing only enough for a 50-pound lot, and flew that first small batch in rather than wait. Now the same trees have matured and the harvest filled a single 152-pound bag. Ibis Garcia, in Dipilto, Nicaragua, completes every step of the process herself, drying whole cherries slowly in the sun at 1,500 masl. The cup is tropical and lifted: pineapple sweetness up front, jasmine behind it. Bonito recommend starting with a pour-over.”
