Highlights
“Liberica reached India in the late 19th century, when coffee leaf rust was wiping out plantations, and at Salawara Estate it had been growing wild along the farm's edges since long before Sharan Y K's grandfather took over in the 1960s. Its cherries ripen unevenly and its beans are irregularly shaped, so for this lot the ripe cherries were sealed in double-walled stainless-steel tanks with a custom starter culture and pressurised with CO2. Liberica's thick, leathery skin resists breakdown, so the cherries spent four days in carbonic maceration before moving to raised beds for a slow 35-day dry.”
