“Kainamui AA comes from the same community of nearly 2,000 smallholder farmers on the slopes of Mount Kenya behind Blanchard's Kainamui PB, but where the PB is the naturally round peaberry, the AA lot is the larger flat-sided beans separated out during milling. Kenya's AA grade is a size designation, not a quality one. Producers handpick ripe cherries and deliver them to the Kainamui washing station, where an extended washed process with two fermentation stages and a final clean-water soak is followed by several days of slow drying.”
