“El Arbol is a small farm in Nicaragua's Nueva Segovia department, where Claudia Lovo grows the Parainema hybrid at around 1,400 masl. This lot was processed as a natural carbonic maceration, with whole cherry held in sealed tanks before drying, which pushes the fruit character forward and softens the acidity. Birdy roasts it light, keeping the cup on pineapple and apple with a chocolate-almond finish underneath. Parainema is a Salvadoran-developed cross bred for leaf-rust resistance, and here it reads sweet and clean rather than earthy.”
