Cherries are carefully selected and disinfected with ozone before undergoing a 36-hour anaerobic fermentation, followed by a second fermentation with specific microorganisms that cultivate distinct flavor compounds. A thermal shock process—alternating hot and cold water—locks in the flavors and prevents over-fermentation. Finally, dehumidifier drying preserves the coffee's creamy body and long, fruity aftertaste. The result is a complex, consistent 93-point profile with notes of lychee, peach, red apple, pear, and caramel.”
