“Elida Estate is one of Panama's most decorated farms, part of the Lamastus Family Estates portfolio in the cool cloud forest along the edge of Volcán Barú National Park, where slow ripening builds density and layered flavor. For this Catuai lot, ripe cherries are processed with Wilford Lamastus's Anaerobic Slow Dry method: a five-day sealed-tank fermentation followed by roughly 45 to 60 days of low-and-slow drying on raised beds, deepening complexity while keeping the acidity bright. The Lamastus family founded the estate in 1918 and has since collected multiple Best of Panama first-place honors, including 2016, 2018, 2019 and 2024. In the cup, expect purple and red fruit acidity, a cherry and winey mid-palate, and a long brown sugar finish that turns sparklier and fruitier as it cools. Rest at least three weeks before brewing.”
