Highlights
“Bajo Canet farm sits at 1,850 m in Tarrazú, Costa Rica, and grows Gesha, SL28 and Typica together for this lot. The raisin honey process is what makes it expressive: freshly picked cherries dry on raised African beds for three days with all the sticky mucilage intact, then keep drying and fermenting slowly. That extended fermentation builds ripe fruit sweetness, a pronounced fermented character and a long finish of elderflower and chocolate. Banibeans calls it one for funk fans - intense but still delicious - and recommends grinding coarser to let the Gesha character show.”
