Cherry is hand-picked ripe only, floated and depulped the same afternoon, fermented 12-18 hours, then dried 16-21 days on African beds at 1,554 m in Santa Barbara — the Honduran region whose altitude and cool nights give dense, bright, floral cups, and whose lots move out through Benjamin Paz and the San Vicente mill. Bourbon, Pacas and IHCAFE 90, roasted light.”
