“Smallholder farmers deliver cherries to the Chelbessa washing station in Sidama, Ethiopia for careful processing. Cherries are sorted by floatation, de-pulped, then dry-fermented for 96 hours before a thorough wash removes the mucilage. The parchment is dried on raised beds for 12-14 days. SNAP operates 7 washing stations across Sidama, Yirgacheffe, and the Guji Zone, focusing on Consistency, Education, and Sustainability. Their team of agronomists trained more than 6,000 farmers last year in land management and climate-smart agriculture through crop diversification and intercropping.”
