“Smallholder farmers deliver their cherries to the Chelbesa washing station for processing. For this Anaerobic Washed lot only the ripest cherries are selected, hand-sorted and floated to remove defects, then de-pulped and left in sealed tanks to ferment for 48 hours without oxygen. After fermentation the parchment is washed twice with clean water and dried on raised beds for 15-20 days depending on weather. SNAP operates seven washing stations across Sidama, Yirgacheffe and Guji, and its agronomists trained more than 6,000 farmers last year in land and nursery management and climate-smart agriculture.”
