“Shantawene is a village in Ethiopia's Sidama highlands where Daye Bensa — founded in 2006 by brothers Asefa and Mulugeta Dukamo — gathers cherry from smallholders farming mixed heirloom varieties at altitude and processes each lot at its own stations. This natural lot was dried in the fruit, which pushes the cup toward cooked fruit rather than florals. Axil roasts it as an espresso, and it holds together in milk without losing the berry notes.”
