“Gondo Washing Station sits at around 1,900 masl on the slopes of the Aberdare range in Murang'a County, operated by the New Kiriti Farmers Cooperative Society. Hundreds of smallholder producers deliver hand-picked cherry daily, where lots are combined and processed with meticulous focus on consistency. Traditional Kenyan washed processing follows: hand-sorting and density separation before pulping, 16-18 hour dry fermentation, full washing with fresh stream water, and slow drying on raised beds over roughly two weeks.”
