“Arsosala is a washing station founded in 2015 that serves around 1,200 smallholder producers in the Urga district of Guji, Ethiopia. Ripe cherries are depulped on the day they are picked, fermented overnight, then washed and dried on raised beds at 1,800-1,900 metres. Axil roasts the mixed-heirloom lot as a bright, balanced espresso: tangerine, apricot, black tea and sugarcane.”
