Highlights
“The eleventh coffee of Aviary's 2026 season, and the 32nd release in the series, comes from Niguse Kayimo's smallholding in Bensa, Ethiopia, planted with 74158 at 2,200 metres above sea level. Christopher Feran wrote the processing protocol and CoQua's Moata Raya oversaw it, with the aim of producing single-producer, smallholder wet-processed coffee - still rare in southern Ethiopia, where smallholders without mill access almost exclusively sell cherry-dried naturals. The lot arrived in August and cupped as a vibrant, tropical fermented honey before being committed to cryostorage.”
