“The fifth release in Assembly's 10-Year Series, this naturally processed Geisha is from the renowned Carmen Estate, previous Best of Panama winners. Selected by Jake Mummery for the Irish Brewers Cup, where it was combined with Finca Deborah Echo Geisha to create his winning routine. The winey process is a traditional, low-intervention natural method: only fully ripe cherries are selectively harvested and laid to dry slowly under the sun, carefully raked with damaged fruit removed by hand.”
