“Hamasho washed honey is Apollon's Gold's first washed-style expression from Eliyas Dukamo's Elto Coffee in Bensa, Ethiopia, grown at 2,200-2,450 m. The lot is processed essentially as a washed coffee but with a deliberately larger share of mucilage left on the seed during drying, which keeps the 74158 cultivar's clarity while adding a rounder, juicier body. The roaster roasts it omni profile and recommends a 1:17-19 ratio.”
