Highlights
“Named for the Carnaval Cajamarquino, this lot pools cherries from six smallholders in Cutervo, Cajamarca — José Manuel Silva, Julia Paredes, Wilder Paredes, Wilson Vásquez, Marino Toro and Dora Toro — each working under three hectares above 1,800 m in traditional agroforestry with native trees and legumes. Fermentation runs 48 hours to build the fruit, then the coffee is washed to stop it and sun-dried for around 15 days. Caturra Rojo, Caturra Amarillo and Pache, 86 points, roasted medium.”
