“Matazano is a small village in La Paz, southwest Honduras, tucked against the Montecillos reserve where clay soils and banana-palm shade slow the cherries down — fewer of them, but sweeter. Eight smallholders contributed to this lot: Juan Ángel Castillo, Dagoberto Castillo, Oscar Díaz, Clarisa Manueles, David Manueles, Abel Rodríguez, Obed Rodríguez and Edi Julián Cáceres. CONEXH, the family exporter founded in 2021 by fifth-generation grower Carlos Ernesto Mejía and his father Mario, processes it natural and handles the traceability. 85 points, roasted medium.”
