“COMSA, founded in 2001 by 61 producers (12 women, 49 men), now aggregates more than 1,500 smallholders around Marcala — Honduras's first denomination of origin, secured with IHCAFE and Spanish cooperation support. Members deliver cherry to the cooperative, where a sorting team picks the best lots before drying. This one is a natural Catuai, Lempira and Icatú blend from 1,300-1,450 m, roasted medium and scored 85 points.”
