“Huila has held a denomination of origin since April 2013 and turns out around 19.65% of Colombia's crop, mostly on farms averaging 1.5 hectares. This community lot draws on smallholders across the department, where volcanic soils, steep slopes and microclimates between 1,300 and 2,000 m produce distinct cup profiles inside one region. Everything is picked by hand — the terrain rules out mechanisation — and fully washed. Castillo, Colombia and Caturra, 84 points, roasted medium as a balanced everyday cup.”
