“Animal's seasonal espresso blend pairs two washed components that rotate with the harvest calendar: La Tribu A.C. in the Sierra Madre de Chiapas, an NGO grouping four cooperatives and 827 mostly sub-three-hectare members, and Comunidades Huila from small farms in Colombia's Huila region. Each origin is roasted separately so the roast stays even, then blended for balance. The profile is a shade darker than Animal's filter roasts so the shot extracts fast and sweet without going ashy; the cup lands on berries, stone fruit and chocolate with balanced acidity and enough body for milk. Current components are Mexico La Tribu and Colombia Comunidades Huila.”
