“Saul Reina has grown coffee at his farm Finca Idania in La Palma, Chalatenango since 2000, putting an emphasis on high-quality lots and prized varieties such as Pacamara, Gesha, Pacas and Bourbon. This third Pacamara selection of the recent El Salvador harvest was pulped and fermented for 18-24 hours, then washed and dried on raised beds for 25 days, giving a vibrant and sweet profile with notes of cooked berries, crisp pome fruit and caramelized sugar. The lot was exported through CafeNor, the fully carbon-neutral mill in the Metapan region of northern El Salvador.”
