Highlights
“Nevado del Huila takes its name from Colombia's highest volcano, and this communal lot has been on Amaya's list for five seasons running. It is sourced primarily from producers in Santa Maria in northern Huila and Pitalito in the south, whose farms sit between 1,600 and 1,900 metres and grow mostly Caturra, Colombia and Castillo. Every small lot that goes into the blend is cupped repeatedly before it is accepted as a component, which is how the roaster keeps the profile consistent year after year. In the cup this harvest is a balance of tart berry and sweet purple fruit - cranberry and fig - with a deep, round finish that reads as dark chocolate. Amaya roasts it to let the region speak rather than to force a roast character. Region: Huila, Colombia. Varieties: Caturra, Colombia, Castillo. Process: washed. 340 g (12 oz) bag at USD 24.90.”
