Highlights
“La Victoria is a communal lot in its fourth season with Amaya, built from coffees grown by 27 smallholder producers in the communities of Santa Maria and Palermo in northern Huila, Colombia. The farms sit in the foothills of the Huila Volcano at extremely high elevations and grow both traditional varieties such as Caturra, Colombia and Castillo and newly identified cultivars such as Pink Bourbon and Chiroso. Every lot begins with handpicked ripe cherry, fermented for 24 hours, pulped, then fermented again for 36-72 hours before washing and drying, most often on patios.”
