“We are glad to have a coffee from Huehuetenango back on the menu and this one from producer Flora Ramos is a great reminder of why we make selections from this origin a mainstay of our summer offerings. We're tasting a cup with an abundance of ripe berry and juicy stone fruit flavor and a delightfully sweet and creamy finish. Flora named her farm Las Gemeles - 'the twins' - after her twin daughters and it's her commitment to care for her family and improve their livelihoods that drives her to continually improve her business. This means refining the picking, processing and drying protocols on the farm as well as investing in upgrades to her wet mill. Flora places a particular emphasis on sustainability and hopes to soon have a soil and foliage analysis done to better understand how to enhance her production methods in such a way that avoids negatively impacting the ecosystem in her vicinity.
