“Finca Costa Rica is a ten-hectare farm in Santa Maria, Huila, owned by Faver Ninco and his family. The 19,900 trees are a field blend of Caturra, Pink Bourbon, Gesha, Papayo and Java, with each of the four children farming their own plot. Whole fruit fermented 12-15 hours before pulping, then 72 hours in sealed barrels inoculated with a selected yeast strain, lightly washed and dried.”
