“Finca El Azafrán belongs to the Rodriguez family, who have farmed this land in southern Huila for three generations and now run it under Luis Hernán Rodríguez Zapata. The farm sits on the slopes of the Peñas Blancas range near Timaná, on clay and sandy soils under native Andean oak, at around 1,700 metres. In recent years the family has renewed the plantations and turned to fermentation research, building protocols for lactic fermentations it can repeat lot after lot. This washed Pink Bourbon is Amauta's first listing from the family: Lavado Fermentación Láctica in the shop's own words.”
