“This pink bourbon is the flagship lot produced at El Vergel Estate, their most intense and fruity coffee. Over 40,000 trees of this varietal were planted in 2016 and 2018. These beans undergo a 48-60 hour anaerobic fermentation, which enhances their innate flavour profile. Sun dried on raised beds until reaching 30% moisture, then moved to mechanical drying machines at 45°C until 16-18% moisture.”
