“From the highlands of Aceh in northern Sumatra, this small lot is wet-hulled, co-fermented with jasmine flowers and then infused with jasmine extract during drying. 49th Parallel roasts it light for filter. The cup is fragrant and tea-like, jasmine and green tea over gentle lemon brightness, with medium body and a lingering floral finish. It sits opposite the lychee co-ferment from the same region, and the pair is a clean demonstration of what the co-fermentation is doing.”
