Tips & Preparation
Key notes:
- Coffee: Washed Churroso from Columbia (SEY).
- Filters: Cafe medium dark Rose papers (t90s).
- Target extraction yield: 20-21%.
- Water temperature: 100°C for unlocking acidity, half full kettle easy to pour.
- Dose: 15g coffee to 270ml water (can go up to 285ml).
- Pouring structure: Three pours with wet wdt agitation.
- High kettle agitation gives sweetness, manual wet wdt gives clarity.
- Big swirl and tap at the end rounds the finish.
Variation:
- Coarser grind = more WDT
- Finner grind = less WDT
Recipe Steps
Preheat the brewer more, put 15g ground coffee, create a diver on the coffee ground.

Pour 50g bloom water to saturate grounds for a 1 min.
Wet wdt the grounds aggressively.(the bed may look ugly)

Pour very fast for 150 ml water.
Wet wdt again.

Final pour aggressively with aggregation to 270ml.
