Tips & Preparation
Recipe Notes:
- Coffee: Nicaragua yellow katu natural from Louis Alberto, notes of chocolate, roasted almond, roasted hazelnut, and stone fruit.
- Dripper: Torch Mountain version two with star in the middle to increase airflow and reduce stalling. Pairs with Origami wave paper (185 or 4 cup size).
- Grind: Marvel Fantox grinder, setting 8.0 (medium), designed for sweetness and clarity.
- Paper Filter: Origami wave paper, rinse in the middle to keep the structure of the paper.
- Variation: For a brighter cup with pineapple notes, limit extractions with a three-pour recipe.
