Recipe Notes:
- Grind finer, brew faster, and prevent choking.
- Expect more developed sweetness and deeper flavors.
- Water temperature: 97.8°C (98°C) or just off boiling.
- Grind size: Coarse table salt consistency, 14 on Baratza Encore, 1 on Fellow Ode, 24 clicks on Comandante C40.
- Paper filter preparation: Fold filter, rinse with hot water to eliminate paper taste.
- Variation: Experiment with different water temperatures, grind sizes, and steep times.
Recipe Steps

Add 400g of water to the Clever Dripper as quickly as possible.
Add 25g of medium-finely ground coffee to the water and start timer.
Stir to saturate all grounds for up to 30 seconds, ensuring no clumps or floating islands.

Place the lid on the Clever Dripper.

Push any grounds stuck to the sides of the filter back underneath the water.
