Tips & Preparation
Pro tip:
- If you have the Polaris feature on Hario scale, it will show you percentages and you can scale recipe.
Coffee ground size:
- Depending on coffee variety and roast level (Timemore C2SPRO from level 13-17) Every time we brew a new variety, we start at level 13 and if coffee is bitter we grind coarser.
Preparation:
- Mountain fold your paper filter and lightly fold it in 4 corners, so it sits better in the V60 dripper.
- Hold down the filter from the side with the excess paper on the V60 dripper and pour water from tap to glue.
- Remove excess tap water and then proceed the same thing in circles with warm water from your brewer. A plastic dripper will warm up faster than a ceramic or metal. We use a V60 Neo dripper in size 01.
- Grind the beans, remove excess warm water of the collector after warming it up and place coffee grounds on V60 dripper forming a crater in the middle.
Recipe Steps

Pour until 22.5gr/15% of total water, covering all coffee grounds

Pour until 60gr/40% of total water. From this step onwards pour in circles, not very close to the edge, with a pace of 2-3gr of water/second.

Pour until 90gr/ 60% of total water (Balanced & Unmistakable)

Pour until 120gr/90% of total water (Balanced & Unmistakable)

Pour until 150gr/100% of total water (Balanced & Unmistakable)

Wait until 3 mins, throw the filter in the trash or compost the grounds.
Remove the warm water from the cup you will pour the coffee and enjoy.
