Tips & Preparation
• Preparation:
- Aerate coffee beans one day prior to brewing.
- Rinse the filter with 93-95°C water.
- Rinse the server with hot water.
• Recipe Background:
- Based on 1:1:1 formula (acidity:sweetness:balance).
- Replicates well on Kalita, Serax, and Wave filters.
• Adjustments:
- Adjust grind size (finer on Commandante, from 28 to 25).
- Adjust water temperature.
• Observe:
- Brewing temperature: 93-95°C.
- Comandante: 28 clicks from zero.
- Kinu M47: Target mid-setting, re-calibrate if your first pour is flowing too fast or slow.
- Ending time: Very few drops flowing through the filter.
