Tips & Preparation
- Credit to Pull&Pour Coffee record this recipe & took the notes -The initial bloom is set with the Switch closed to prepare the coffee fully for extraction.
- The middle part of the brewing happens with the Switch open when you can get the best extraction from the coffee.
- At the end, you switch back to an immersion style brew with a lower water temperature in an effort to avoid any adverse flavors/astringencies from entering the final cup towards the end of the brew.
- This recipe is from Tetsu Kasuya, the 2016 World Brewers Cup Champion.

Close the Switch and pour 50ml of 92°C (92.2°C) water.

Open the Switch and pour 70ml of 92°C (92.2°C) water.

With the Switch open, pour 80ml of 92°C (92.2°C) water.

Close the Switch and pour 100ml of 70°C (70°C) water.

Open the Switch.
