Tips & Preparation
Recipe Background:
- Designed to be forgiving and work with various grinders and coffee preferences.
- Aims for a TDS of over 1.3, which is preferred by many.
- Can be adapted to other pourover devices.
Temperature Guidelines:
- Light or ultra-light roasts: 93-96°C (lower if less 'oomph' is needed, higher if more is desired, but be cautious of 'brown' flavors).
- American light to light-medium roasts: 90-93°C.
- Other roasts: Below 90°C.
Variations/Adjustments:
- Grind Size: Adjust to achieve a total brew time between 2 minutes and 2 minutes 30 seconds.
- Ratio: Can be adjusted (e.g., 1:16, 1:17, 1:13) to fine-tune strength and acidity.
- Swirling: A gentle swirl at the end can slow down the draw down if the grind is too coarse.
- If the recipe is too strong, grind coarser and swirl to elongate brew time.
- If using fast filters and finer grinds lead to bitterness, maintain grind size and swirl.
Preparations:
- Grind 15g of coffee to a size that yields a total brew time of 2:00-2:30.
- Heat water to the appropriate temperature based on roast level.
Recipe Steps

Pour 45g of water (triple the coffee weight) at a flow rate of approximately 7 ml/s.

Pour another 45g of water, bringing the total to 90g.

Pour the remaining water up to 225g at a flow rate of approximately 10 ml/s, using small circles in the center.

Allow the coffee to draw down completely. Total brew time should be between 2:00 and 2:30.
