Recipe focuses on brewing funky anaerobic or natural coffees using a selective extraction method to reduce umami and enhance fruitiness. Inspired by Carlos Escobar's World Brewers Cup technique.
Background:
- Anaerobic natural coffees can sometimes taste like olives or kombucha due to high glutamate level.
Preparation:
- Use two filters in the Aeropress cap and rinse with hot water.
Recipe Steps
Use 2 bottom filters in the basket, rinse the filters, load 13g coffee.
Pour 50g of 90°C water, then give it a shake.
Plunger on and squeeze out the liquid into a separate container, until you hear the hiss (approx. 35-36g).
Put AeroPress back to scale and tare it again.

Pour 150g of water into the Aeropress.
Insert the plunger and pull up slightly to create a vacuum to prevent dripping, wait for 2 mins.
