Tips & Preparation
Features:
- Combines high kettle turbulence/agitation with Mellow Drip.
- Uses three pours with higher flow rate at the beginning and wet WDT.
- Pours close to the bed to simulate swirling.
Preparation:

Grind finer for nonwoven filters, coarser for fast-flowing paper filters.

Temperature between 94-98°C is recommended.

Kettle is kept off during brewing for natural temperature decline.

Variations:
- Nonwoven filter: Grind finer, expect faster brew time and murkier cup.
- Fast-flowing paper filter: Grind coarser, expect longer brew time and cleaner cup.

Preparation:
- Pre-wet filters.
- Grind coffee early due to fresh roast.
Recipe Steps

Pour 60g of water with a fast flow rate (12-15 ml/s), wet WDT, agitate, and swirl slightly, pushing the coffee on the edges in.
Wait for 1 minute for the bloom.

Pour up to 170g, swirling around close to the bed.

Pour the final pour up to 245-250g when the water is almost drained out.
